Drooling yet?! 

I have no idea what’s gotten into me these past few days, but man am I on a roll with recipes! To be honest, I’m not even sure who I am, Ha Ha! Whatever the reasoning behind my kitchen addiction lately, I’m all in!

The recipe I’m about to share is unlike any other! I’ve made countless different veggie burgers, and unfortunately NONE hold. I’m not sure if it’s me, or what, but I’m just not a fan when that happens. I mean who likes eating a burger that falls apart on them at the first bite? Mise well just eat meatloaf!

Alright, enough rambling… here’s the recipe…

Ingredients

  • 1/2 cup quinoa
  • 3/4-1 cup vegetable broth
  • 8 baby carrots, shredded
  • 1 medium white onion, chopped
  • 1/4 tsp. garlic powder
  • 15 oz. black beans, drained and rinsed
  • 1/4 cup parmesan breadcrumbs
  • 2 egg whites, or 1 egg
  • 1 tbsp. cumin
  • 1/2 tsp. paprika
  • 1/2 tsp. pepper

Preparation:

  • Bring vegetable broth to a boil. Reduce heat to low. Add quinoa, and cover until liquid is absorbed (10-12 minutes).
  • Once quinoa is cooked, add to food process along with carrots, onions, bread crumbs, egg, cumin, garlic powder, paprika, and pepper.
  • Pulse until combined to the consistency you want (I like mine to  be a little chunky).
  • Form into 4 large patties, or 8 sliders
  • In a nonstick skillet, spray with nonstick cooking spray; cook burgers until browned on both sides

and we all knew when you eat a burger, you gotta have some sweet potato fries….

So that’s exactly what I had, except mine were in chip like form. I topped them with one packet of powdered stevia & some maple syrup!

& now it’s time to wake Joshua up for breakfast, and let the dog(s) out. We’re dog sitting for the next 2 weeks, so with Roxy & the puppy.. things are about to get crazy over here, Ha Ha! Have a great start to the weekend.

Good Morning, beautiful & wonderful readers of mine!! I have some really exciting news to share with all of you ❤

As many of you know, I have been enrolled at The Institute of Integrative Nutrition working towards becoming a Holistic Health Coach.

Not only has Integrative Nutrition taught me a great deal of information, but my journey so far this year been extraordinary, more than I could have ever dreamt of.

I’ve known I wanted to be involved in the health field for quite sometime, I just wasn’t sure what part. Was it the personal trainer aspect, or was it dealing more with nutrition. Well, I can 100% say it’s for Nutrition.

So where does the exciting news fit in?…Well, I have officially started my own Holistic Health Coach business.

After much thought, I’ve decided on the name “Health, Happiness, & Balance”.

I’ve also been working very hard on my website, which you can view HERE, and have even put together a facebook page, which you can view HERE

I will be working with individuals on how to reach their health goals, including stress reduction, increasing energy, and losing weight. I want people to know that they have the opportunity and MY support on creating a happier, healthier, and more fulfilling life <3.

Nothing could possibly be more rewarding to me than knowing that I attributed to their success and happiness. Seeing a smile on an individuals face is what keeps me wanting to be the best Holistic Health Coach I can be. I want to know everything there is to know about certain foods, or certain supplements. No journey is ever simple, but it is what you make of it. You have control of your own destiny in life.

Alright, now onto my meals from yesterday, Tuesday May 28, 2013

Meal #1: Smoothie. In the mix: Pineapple-Coconut water, 1 banana, Light n’ Fit blueberry Greek yogurt, 1 tbsp. coconut pb, xanthan gum, ice. Topped with coconut flakes & another tbsp. coconut pb

Meal #2: Egg Omelet. In the mix: 2 eggs, tomatoes, feta cheese, and ground flaxseed. On the side I had melon & grapes

Meal #3: Wrap on a spinach flatout wrap. In the mix: turkey deli meat, tomatoes, cucumber & mayo + raspberry chobani and baby carrots

Meal #4: Two slices flaxseed bread (recipe HERE) topped with a mixture of tuna, chopped apple, raisins, celery, cucumber, and laughing cow cheese

Meal #5: Acorn Squash stuffed with brown rice/quinoa mix. In the mixture: Brown rice/Quinoa mix, laughing cow cheese, chickpeas + unpictured pineapple juice

Meal #6: Ricotta Bowl. In the mix: ricotta cheese, baked sweet potato, chopped apple, 1 tsp. syrup, 2 tbsp.almond butter

Good Morning! How are you this morning? I can only imagine most of you are drained from the holiday weekend. Hopefully it hasn’t been too painful waking up and getting your day started :). Like I mentioned in my post yesterday, we had no holiday celebration since Joshua was working. Yes it sucks, but hey at least I was able to do a little experimenting in the kitchen. Lucky for you, I have not one, not two, but THREE recipes to share with y’all today!

Ingredients:

  • 1/2 Acorn Squash (baked)
  • 1/4 cup quinoa
  • 1/4 cup milk ( I used Almond)
  • 1/4 cup water
  • 1 medium apple
  • 1/2 tsp. cinnamon
  • 2 tbsp. raisins
  • 1 packet stevia

Preparation:

  • To bake an Acorn Squash, preheat oven to 400 degrees. Once preheated place WHOLE acorn squash on a baking sheet & into oven. Bake for 40-45 minutes until soft, or to your liking
  • Cut acorn squash in half
  • In a saucepan, bring quinoa, milk, and water to a boil
  • Once boiling, lower heat and allow to simmer for a few minutes
  • While quinoa is boiling, cut up apple into bite size pieces
  • Add apple, raisins, stevia, and cinnamon to quinoa mixture
  • Cook until all liquid is absorbed
  • Stuff 1/2 your acorn squash with quinoa mixture
  • Top with 1-2 tbsp. of nut butter (don’t skip this step, because nut butter makes everything better.. oh and a tsp. or two of maple syrup as well)

Ingredients:

  • 1 cup ground flaxseed
  • 1/2 tbsp. baking powder
  • 1 eggs
  • 3 egg white
  • 2 tbsp. applesauce
  • 1/4 cup water
  • packet of stevia

Preparation:

  • Preheat oven to 350 degrees
  • Spray loaf pan with cooking spray
  • Combine flaxseed, baking powder & stevia. Mix well
  • Add in remaining ingredients. Mix well
  • Pour batter into pan, and bake for 35 minutes
  • Enjoy!

I topped 2 slices with a mixture consisting of tuna, apple, celery, cucumber, laughing cow cheese & raisins. Delicious!

Ingredients:

  • 1  frozen banana
  • 1 cup chopped carrots (I steamed mine so they would be soft when blending)
  • 1/4 cup oats
  • Vanilla protein powder (I used Vega)
  • 1 cup milk
  • 1 tsp. cinnamon
  • 1/2 tsp. maple extract (or vanilla)
  • 1/2 tsp. xanthan gum (optional)
  • Ice

Preparation:

  • Pour milk, protein powder, cinnamon, maple extract, xanthan gum, and oats into blender. Blend for 5 seconds
  • Add carrots, banana and ice
  • Blend until your liking
  • Top with coconut flakes & raisins (optional)

MIMM: Happy Memorial Day

Happy Memorial Day! As I’m sure many of you have been celebrating the holiday with your loved ones & delicious food, ours is practically the complete opposite. Joshua is at work, and I’m home studying. Exciting right?! Ha Ha! Thats okay, because soon enough (September), we’ll be enjoying a 2 week vacation together. With the scorching temperatures here, I must say it will definitely be nice to get away for a little while and give Joshua a break from his long work days.

Not only is it Memorial Day, it’s also Monday which means one thing… Marvelous In My Monday is happening. Before I get into what’s Marvelous in my life at the moment, I feel it’s only necessary to give a big thanks to Katie @ Healthy Diva Life. Katie started this link-up 51 weeks ago, and since the very first day, I feel it’s been incredibly beneficial to all of us. Were able to share the happiness and joy that’s going on in our lives. To me, that right there is an absolute perfect way to start any week ❤

Marvelous is… finding a photographer to take updated photos of Joshua & I while we’re on vacation! (below photo is from 2009)

Marvelous is… not only did I gain another TWO pounds this past week, but a coworker of Joshua’s who I hadn’t seen for a little while didn’t even recognize me because of my weight increase. It just goes to show that not only can you gain weight by eating healthy, but with determination, heart, and focus you can make a dent at fulfilling your dreams. I may not be ovulating quite yet in chance of getting pregnant and having a baby that my husband and I hope for.. but every improvement is just one step closer

Marvelous is… knowing that I’ve been blessed with the most incredible husband. Joshua has been my rock for 10 years, and to this day I still find myself falling deeper & deeper in love with him. I honestly sit, think, and thank God everyday for giving me such an amazing person to love and grow old with. Joshua has worked hard to give us the life we have, and I don’t think I could ever put into words how much his sacrifice truly does mean to me. ❤

Spring & Summer Workout Tips

Hi Guys! After Friday’s Top 5 Herbs post explaining their benefits and recipes for those spring and summer days where nothing sounds more perfect than a refreshing beverage, I figured it’d only be right to share my Top 6 Summer Workout Tips.

  • Invest in lightweight and breathable clothes. Also, think about wearing a hat to keep the scorching sun away from your face.

  • Match your workouts to the temperatures. If you’re a runner, get your miles done in the early hours. If not, try other cardio activities such as: biking, kayaking, surfing, padding, or even swimming

  • Replenish your electrolyte and salt consumption while exercising
  • Drink water to stay hydrated all day long. Some people may think you can get by with a couple glasses; however that’s not always the case. The more water you drink, the better of chance you’ll have of preventing symptoms such as dizziness, stomach cramps & headaches.

  • Moderate your heart rate
  • ..and MOST importantly, LISTEN TO YOUR BODY! Never push yourself in extreme temperatures. If you notice any heat-illness symptoms or just feel bad in general, stop your workout & get into AC.

Our bodies communicate to us clearly and specifically, if we are willing to listen to them!!”

As I’m sure there are many other tips I forgot to mention, I’d love to hear ones you’ve come up with over the years!

  • Is it summertime where you live yet? Considering it’s been 110 degrees here, I’d say YES!
  • What is one summer activity you’ve always wanted to try, but never have? I’ve been wanting to try Stand Up Paddling for quite sometime. One day, One day!

Top 5 Herbs

Happy Friday!! I must say, I am so glad this week turned out to be much quicker than last. Is it just me or did last week seem to drag? Whatever the reasoning behind this feeling, I’ll take it. I am more than ready for Joshua’s day off tomorrow and to be able to get in some much needed cuddle time.

So for today’s post, I wanted to not only make it informative but fun at the same time. Not only do I want to share five of my favorite herbs and their benefits with y’all, I thought I’d include some refreshing cocktail recipes as well. I mean it is spring & summer season =)

Basil:

  • Skin & Hair Health. The juice of basil is very effective in treating acne, insect bites, and ringworm
  • Cardiovascular Benefits. Because basil is a good source of magnesium, which promotes cardiovascular health by relaxing muscles, improving blood flow and lowering the risk of cardiovascular spasms
  • Kidney Problems. When you drink basil, it can help prevent kidneys tones
  • Respiratory Disease. When you boil basil leaves, it can be used as home remedy for treating asthma

Strawberry Basil Lemonade (The one on the left)

Ingredients:

  • 3 strawberries de-stemmed
  • 5 basil leaves
  • 1.5 oz. Smirnoff Strawberry Vodka
  • 1 oz. puree strawberries
  • Fill (approx. 4 oz.) Lemonade

Preparation

  • Muddle 3 strawberries with 5 basil leaves, and Smirnoff in a 16 oz. glass. Mix strawberry vodka, and strawberry puree in mixing glass or martini shaker. Add ice, shake for 15 seconds and pour into glass. Fill with lemonade and stir

Dill

  • Bone Health
  • Anti-Bacterial meaning it can be used to fight off infections
  • Digestive Benefits. The dietary fiber is believed to calm an upset stomach, and prevent diarrhea
  • Sleep Aid. Since ancient times, dill has been used as a remedy for insomnia

The Ultimat Dill

Ingredients:

  • 2 Cucumber slices
  • 1 Dill sprig
  • 2 oz. Ultimat Vodka
  • .5 oz. Agave Nectar

Preparation:

  • Blend 1 cucumber slice, dill sprig, lime juice, vodka, and agave nectar. Put over Ice & garnish with other cucumber slice

Parsley

  • Healthy Heart. The vitamin B9 found in parsley can help ward off cardiovascular disease such as; heart disease, and stroke
  • Lowers blood pressure. Having parsley everyday has been found in helping reduce blood pressure and the risks related to high blood pressure, such as hypertension
  • Hormonal Balance in females, and has also been known to help ease cramps during your menstrual cycle
  • Rheumatoid Arthritis

Parsley, Kale, and Berry Smoothie

Ingredients:

  • ½ cup (packed) flat-leaf parsley (leaves and stems)
  • 4 kale leaves (center ribs removed)
  • 1 cup frozen berries
  • 1 banana, cut into pieces
  • 1 tsp. flaxseed

Preparation:

  • Puree ingredients with 1 cup water in a blender until smooth (add water if too thick)

Sage

  • Brain Function.  Four compounds isolated from the extract of sage were found to be AChE inhibitors, which may be protective against Alzheimer’s disease
  • Bone Health. Sage is rich in vitamin A and calcium, which are very important for growth of teeth, bones & skin
  • Digestive problems. Helps with gas, stomach pain, bloating, etc…

Sage Lady

Ingredients:

  • 1 ½ parts Absolut Mango Vodka
  • 2-3 fresh sage leaves
  • 3 slices cucumber
  • 1 part simple syrup
  • ½ part Cointreau
  • Dash of peach bitters

Preparation:

  • Combine cucumber, simple syrup & sage in the bottom of a mixing glass, by pressing them with a spoon. Shake with ice. Fine strain into a cocktail glass. Garnish with a spanked sage leaf

Thyme

  • Nutrient-Dense Spice.  Excellent source or iron, manganese, and a very good source of calcium and food source of dietary fiber
  • Infectious Agents. Because thyme is rich in vitamin C, it helps the human body develop resistance against harmful pro-inflammatory free radicals
  • Digestive tonic and increases appetite
  • Chronic Gastritis.

Blackberry-Thyme Margarita: Serves 2 (The one in the Middle)

Ingredients:

  • 16 large fresh blackberries, divided
  • 4 small thyme sprigs, divided
  • 6 tbsp. 100% blue agave silver tequila
  • ¼ cup simple syrup
  • 3 tbsp. fresh lime juice
  • 1 tbsp. orange liqueur
  • 2 cups ice cubes, divided
  • ¼ cup chilled sparkling wine

Preparation:

  • Place 14 blackberries and 2 thyme sprigs in a medium bowl. Press firmly on solids with wooden spoon until mashed. Mix in tequila, simple syrup, lime juice, and liqueur, then 1 cup ice. Stir to blend well. Strain into large glass measuring cup. Mix in sparkling wine. Divide remaining ice between 2 small glasses. Pour mixture over. Garnish each with 1 blackberry and 1 thyme sprig
