What I Ate Wednesday :: Actual Wednesday

Happy Hump Day and What I Ate Wednesday [hosted by the fabulous Jenn @ Peas and Crayons]! Wish I could say this morning has started off on a happy note, but I would then be lying. As Monday went on, I started getting a sore throat & earache. I took some cough drops (ate some cough drops… does anyone else have a problem on forgetting to actually suck them?), and some medicine for my throat. Well, just my luck, this past day and half has been down-right brutal; can’t sleep, can barely eat, and just not hungry. Because the pain hadn’t eased up, I went to the doctors last night. Here to find out, my throat is inflamed & I need to get one of my ears drained. Lucky me! They gave me antibiotics, so I’m just patiently eagerly waiting for the meds to kick in… before I go crazy!

Phew! Now that y’all just listened to me vent, let’s move on to What I Ate Wednesday [last Wednesday]

Meal #1: Allison’s Salted Caramel Pancakes topped with peanut butter, cinnamon and apple slices. I’m very content with water throughout the day, however recently I’ve been drinking other liquid in the morning for extra calories. On this particular day, I enjoyed hot chocolate on ice (told you, I dislike anything warm). *Random fact: I actually don’t eat my pancakes right away. I let them sit for a little while so they are almost cold.

Meal #1

Meal #2: Smoothie: In the mix: 1 cup water, 1 tsp. xanthan gum, 1 frozen banana, pineapple, 2 tbsp. earth balance coconut peanut butter spread, ice. Topped with a serving of Anahola Granola-Original thanks to my best friend, Sandra ❤

Meal #2

Meal #3: Salad with Chickpea Mix (grounded chickpeas, with crushed almonds, chopped apple, onions, peppers and lemon juice) with more peppers, tomato, parmesan cheese & salsa. On the side I enjoyed and quickly devoured one of the Lifebars that Lucie (thank you again darling) sent me.

Meal #4: The usual. Tuna mixture (tuna, laughing cow cheese, celery, cucumber, and yellow pepper) paired with pretzels, and sliced apple

Meal #5: Breakfast sandwich: 2 slices whole wheat  buttered toast with 1 egg, 1 egg white, 1/4 avocado, turkey bacon ketchup. + sliced apple. For some reason, I was craving apples all day.

Meal #6: 1/2 cup pumpkin, 1 scoop cinnamon bun protein powder, and crushed carrot cookies (frozen for an hour), and of course topped with more cookies. This bad boy is amazing! I have no shame admitting that I’ve eaten it for dessert every night since.

… now i’m going to go lay back down, and try not to cough up any lungs 🙂

New Recipe: Eggplant Jam

Hi guys! How are you? I’m doing absolutely wonderful. I’m not sure if you’ve noticed, but I haven’t been commenting on many posts lately. It’s not because I don’t adore every one of you, I just haven’t been in the “blogging mood”. I’ve been so occupied with school lectures and studying, the last thing I’ve wanted to do was sit around the computer. Don’t worry though, I’m back and ready to comment away 🙂

Alright let’s move on to happier & exciting things.Yesterday I realized that the two eggplants I had in my fridge were about to go bad. Well, I absolutely HATE letting food go to waste and was very determined to use them in some way.

After browsing punchfork, and googling eggplant recipes for a little bit (1 hour to be exact), I finally stumbled upon EGGPLANT JAM! I know what your thinking, eggplant jam? Yup, I wasn’t sure about it at first, but boy am I glad I decided to give this recipe a try.

Eggplant Jam :: Adapted from David Lebovitz

Ingredients:

  • 2 medium eggplants
  • Salt
  • Olive oil or olive oil spray
  • 1 clove garlic, peeled & minced
  • 1 tsp. paprika
  • 1/2 tsp cumin
  • 1/8 tsp. hot sauce
  • 1/8-1/4 tsp. cinnamon
  • 3 tbsp. water
  • 1 tbsp. lemon juice
  • 1 tsp. dried parsley

Preparation:

  • Rinse and dry the eggplant
  • Using a vegetable peeler, peel in vertical strips, leaving about 1/2 inch between each peeling. Slice eggplant lengthwise
  • Sprinkle eggplant with salt, and lay on paper towel for about 30 minutes to extract eggplant juices
  • Preheat oven to 375 degrees F.
  • On a baking sheet, either brush olive oil on eggplant, or spray with olive oil spray, and then flip them over
  • Bake for 25 minutes, flipping eggplant over midway
  • Once cooked, put them in lg. bowl with garlic, paprika, cumin, cinnamon, hot sauce & water, and then mash well
  • Drizzle small amount of olive oil, or spray with olive oil spray in a skillet.
  • Cook the mashed eggplant on low heat, stirring frequently for 20 minutes, or eggplant mixture becomes thick
  • Stir in lemon juice, and let cook for another minute
  • Once complete, remove from heat & fold in parsley

It may look like a lot of steps, but I promise you, if I had no trouble, your good to go :).

And now I’m sure you’re wondering what in the world you can pair eggplant jam with right? The original recipe mixed in molasses, however I decided to try it a different way…..

BLT & Eggplant Sandwich

Ingredients:

  • 2 slices whole grain toast
  • 2 slices turkey bacon
  • tomato
  • 2 tsp. light mayo
  • lettuce
  • EGGPLANT JAM

Preparation:

  • Cook bacon in skillet until done
  • While bacon is cooking, toast both pieces of toast, and thinly slice tomato
  • On one piece of toast; spread mayo, and top with lettuce and tomato slices
  • On other piece of toast; lay down bacon & top with your eggplant spread

Yes I’m aware that eggplant jam may look gross, but don’t let looks fool you. It’s delicious!

Thankful Thursday :: Short and Sweet

Good Morning to all of my wonderful readers ❤ I don’t have too much time to write this post today ( LIE: I have all the time in the world, but that time needs to be devoted to school work), but it’s Thursday and we all know what that means… Thankful Thursday!!

Due to the above reason, I’m going to have to keep this Thankful Thursday entry short & sweet. How am I going to do both you ask? Simple, less words & more pictures.

Today I am Thankful For… Walks with Roxy. Sure they aren’t all rainbows and butterflies, sometimes she has to be disciplined and may even miss out on a treat upon returning home, but for the most part, they are one of the major highlights of my day.

It’s nice to get out of the house for some fresh air and squeeze in a little exercise throughout the day. Sometimes we’ll play fetch along the walk, well if you call me throwing a stick and her running the wrong way fetch. Some days when I’m unable to find a stick, I can trick her by “throwing” AIR (have I ever told you she’s not the smartest dog when it comes to that sort of thing?).

What I Ate Wednesday :: Valentine’s Day

Instead of showing my meals from Tuesday, I thought it’d change it up a little bit, you know go crazy & wild on you. So without further ado, here are my meals from Valentine’s Day!! 

Since I knew Joshua had dinner reservations on Valentine’s Day, I wanted to make sure I could still prepare him a Valentine’s Day dish as well. So Wednesday night, I cooked us crab cakes & roasted asparagus.

Meal #1: Valentine’s Day Smoothie: In the mix: 1 cup coconut water, 1 scoop strawberries & creame protein powder, 1 cup strawberries, 2 tbsp. peanut butter, xanthan gum, ice. Topped with Barbara’s Cereal

Meal #3: Garden Spinach and Vegetable Wrap: In the mix: meatballs, lettuce, cucumber, tomato, orange peppers, and garlic herb cream cheese. + banana with cinnamon (which is odd because usually I don’t care for bananas unless their incorporated into a smoothie)

Meal #4: Tuna salad with pretzels and yogurt (frozen)

Meal #5 & #6: Joshua had dinner reservations at a new-to-us restaurant called Mughal Mahal. The restaurant offers Indian, Chinese, Turkish, and American Dishes.

To start off, we shared the Shrimp Cocktail (un-pictured). Unfortunately, I wasn’t aware that they drench the shrimp in Thousand Island dressing. Don’t think for a second that stopped me from enjoying some shrimp though. Nothing a napkin can’t fix.

For our entrees, I went with the vegetable enchiladas (right), and Joshua had chicken and fries.

…and what’s a dinner date without dessert??!! We originally agreed to share two desserts; Kulfi (Indian ice cream) & a vanilla sundae. Well, Joshua wasn’t a fan of the kulfi, so he had the sundae & I had the kulfi. Not a problem with me because the kulfi was amazing. I kinda wish I had it for every meal.

Truthful Tuesday :: Fears and Worries

Hi guys! How was your holiday? I’m sure the thought of heading back to work today sounds grueling huh? Just try to remind yourself, only three more days until the weekend =)

When I went to write today’s post, I wasn’t exactly sure what to write about; a new recipe? No; a new workout? No; random thoughts? No.

After looking back at my posts from last week, I figured I’d do another week of Truthful Tuesday. I’m not sure if this will be an ongoing occurrence, but for now, I’m rolling with it.

  • I like to believe I am a very positive woman, but I do have days filled with negativity, and unhappiness. Take yesterday for instance; I felt uneasy and unpleasant with myself. Knowing there’s only a month and half until I revisit my OBGYN brought scared feelings to the surface. What if I’m told more horrible news, what if all the hard work I’ve been putting in doesn’t show in blood results? But you know if there’s one suggestion I can give you during these times it would be, lean on a supportive person you love. If you don’t have someone, treat yourself… your beautiful & deserve it.

  • I hate spending money. I’m not even sure if the word hate describes it best, maybe I should say I get scared. Sounds crazy right? It’s true though. I don’t mind spending here and there but that’s about it. I’m very cautious with our money, and feel it’s very important to put $$$ into our savings account whenever possible. With my husband’s job, civilian contractor, his job isn’t always guaranteed. Yes he may sign a contract, but if the company he works for needs to cut people, anyone can be released at any given time. Being that were in a complete different country, it can be quite nerve-racking.

  • I have one major fear in life. That fear is being kidnapped. Sure spiders freak me out, and being attacked by a shark is on the list, but nothing compares to my fear of kidnapping. Even as a young child, I would have nightmares of “bad guys” breaking into our home, killing my family & taking me with. Obviously today those dreams don’t exist, but the fear is still there. Surprisingly though, living in Kuwait has helped. I feel safer than I have in a while, which is strange because I was brought up in a nice neighborhood.Maybe it has to do with the fact that many people out here worship Americans, or maybe it’s because the area we live in doesn’t have much crime. Whatever the case may be, it’s nice to have that feeling.

But you know what… just like myself, and everyone who has fears and worries, nothing will hold me back from living a life filled with happiness, joy, and laughter. Sure some days will be better than others, but that’s the wonderful thing about life; you get knocked down, but you have the choice of getting up again. Take advantage of the wonderful gifts and people God has blessed you with <3.

Marvelous In My Monday

How has your weekend been so far (assuming most of you are still off for the holiday). Joshua and I had a wonderful weekend. When he got home from work on Saturday, I cooked up a BLT for him, and a veggie wrap for myself. After dinner we busted out yahtzee & watched a Madea movie… well we attempted too. I’m pretty sure we were both passed out around 9:15, ha!

Sunday came quick, thanks to obnoxious neighbors above us who wanted to pound on the ceiling around 1:30 in the morning. So you know, I did what any normal crazy person would do… sweep the floors, do the dishes, laundry, bake gluten-free coconut flour bread (Thank you Madison, it rocked!), and even cleaned the bathroom/kitchen/living room. For some reason I’m always the most productive when I first wake up… usually not at 1:30 in the morning though.

The rest of the day consisted of:

  • Breakfast: made a smoothie for myself, and eggs with bacon & toast for Joshua
  • Took Roxy for a walk
  • Walked to a nearby park around lunch time & had a picnic
  • Went for a walk together
  • Watched The Impossible (I cried)
  • Starting reading chapter three of “The Meaning of Marriage”
  • Lots of lounging and cuddling as the day went on

… okay, and now that we got the weekend covered, it’s time to show you some GREAT new finds & foods I tried this weekend.

I’m not sure if these exist in the states, but if so… GET SOME! I’ve never been a fan of packaged oatmeal… until these amazing things came along.

  • Reeses Peanut Butter Hearts. I cannot even tell you how happy (I may have jumped up and down for a second), when I came across these @ our grocery store. They may of cost me a leg & arm (since they are considered “international food” here in Kuwait), but they are worth every $$$
  • Greatest wraps to ever exist. Okay, maybe I’m exaggerating a little bit, but they are good.
  • Carrot Cake Super Cookies. I’m a girl who loves anything carrot cake, so when I saw these on Vitacost you bet your balls they were going right in the “cart”. The taste is awesome, they go perfect in a smoothie or oatmeal, and for 150 calories you can eat devour 20 of them
  • Am I on tropical getaway?!!. With alcohol being illegal out here, this is about  as close as I’m getting to a coconut rum & pineapple drink, Ha! Being the smoothie queen I am, of course I had to incorporate it into a smoothie; 1 banana, 1 cup mango coconut water, and 2 tbsp. of this peanut butter… oh my word, HEAVEN!

… and that right there ladies (and gentlemen), is the reason why today is so marvelous :).
