Thankful Thursday

Today I am Thankful for YOU. I cannot tell you how much your prayers & sweet words mean to me.

Unfortunately, I’m still very much under the weather. I ended up going to the Emergency Room last night when Joshua got home from work. I had a temperature of 100.5, and my blood pressure was 71 (very low). The doctor wanted to admit me for the night and hook me up to an ivy. However, I’m very heard-headed & just not fond of hospitals. She was very understanding, and subscribed me 4 different kinds of medications to help. Also, since I’m so dehydrated (did I tell you I haven’t been able to keep ANYTHING down? Water & I just don’t get along), I’ll be taking pedialyte and drinking lots of juice.

Today I am Thankful for My Husband. Joshua has been such a sweetheart, and doing whatever he can to make me better; making sure I drink juice (that’s a huge task), making me toast, giving me medicine,etc…). Last night we didn’t end up falling asleep until after 11:00, well around 2:00 I woke up in a lot of pain, and just needed comfort. Joshua was right there by my side, even though he had to be up for work at 4:00. He even did the dishes & laundry. What a man right??!! Then at four, we walked next door to McDonald’s so I’d have orange juice for the day. I’m not quite sure what in the world I’d do without him (probably be stubborn, completely dehydrated & passed out on the floor to be honest). *Joshua, I love you & I can’t thank you enough baby ❤ ❤

Today I am Thankful for My Mom. Even though she’s oceans away, she still knows how to put a smile on my face & calm me down. She offers the greatest advice, and just shows she cares day after day. My mom is my best friend, and without her, life wouldn’t be the same. There would be no amazing advice, or daily laughs. Life simply wouldn’t be life. I love and miss you Mommy!

What I Ate Wednesday & Workout Buddy

If you’re not familiar with What I Ate Wedneday, it’s hosted by Jenn @ Peas And Crayons. It’s a day where you share your meals or recipes, a day where you can check out other blogs & find some inspiration on the food front.

Let’s get started shall we:

Meal #1: Three caramel pancakes all smothered in peanut butter, unsweetened coconut flakes,3/4 of an apple and syrup. On the side is the remaining apple slices

Meal#1

Meal #2: Nothing. Just wasn’t hungry

Meal #3: Egg salad (in the mix: one egg, one egg white, celery, cucumber, and laughing cow cheese) inside a pepper nickel wrap. On the side I had another apple and steamed broccoli

Meal#3

Meal #4 # 5: …Maybe a handful and half of Snyders Sourdough Nibblers. Wasn’t very hungry

Meal#5

meal #6: Yogurt (frozen for an hour), pb2, and more nibblers. Wasn’t hungry, but was craving something cold.

.. and that right there my friends, is what I ate yesterday with an upset stomach. Unfortunately  it’s looking like it’ll be that way again today with an exception of what I had for lunch. I’m thinking that’ll be a peanut butter and jelly sandwich.

Workout Buddy

This is a program created by the oh-so wonderful Kaylie @ Happy Kaylie Place. Basically it’s a program where every month your set up with a new Workout Buddy. They keep you motivated, they offer tips & suggestions. It’s really a wonderful program!

In January, I was matched with Alek from Run, Serve & Cook. In the beginning, our e-mails were flowing, we got to know one another. Sadly though, the e-mails gradually decreased. You see, Alek had a very busy month of January. He went to the west for a modeling gig, and had a lot on his plate. I do wish he would have kept with the e-mails, but I am proud of him for reaching for his goals. He showed that exercise isn’t everything. Life gets in the way sometimes, and that is totally acceptable. I could have been down that this past months workout buddy wasn’t all I thought it would turn out to be, but why? Alek is living his dream. He’s doing what’s best for him, both mentally and physically. That right there, is awesome & so inspiring <3.

First Thing

Good Morning. I had intentions of writing a different post this morning, but things change. I’ve come down with some sort of stomach bug, and to be honest; I’m really not in the mood to write anything. However, I thought I’d fill out this survey I saw over at After The Ivy League’s post on Friday. Short & Fun.

First Thing Survey

  • First thing you do when you wake up in the morning. I wake up twice; Once to wake Joshua up around 4:00, and then again at 6:00. At that time, I usually check my phone & send Joshua a Good Morning text.
  • First thing you reach for when you open the fridge. If I have leftover pancake batter, all I’ll need is syrup. However, if I need to make more I’ll grab 2 eggs & Almond Milk
  • First thing you do when you get to the gym. Sign in
  • First thing you do when you get home from work. Can’t answer since I have no job.
  • First car. 2000 Black Mercury Cougar

  • First car accident / traffic violation. First Car Accident: I’m not sure if it’s considered a car accident per-say, but I did run through our garage wall (thought I was in Reverse but really I wasn’t.. whoops). First Ticket: Speeding on the way to visit my brother @ Lock Haven University
  • First thing you wanted to be when you grew up. Orthopedic Surgeon. I had so many broken arms while growing up that I figured I was destined to be a surgeon

  • First beverage of choice. Water
  • First choice breakfast. PANCAKES!!

  • First choice dessert. Tough question. There are so many choices. I could saw cookies, or I could say cupcakes/cake, but when it comes down to it… I’ll choose yogurt (frozen) with peanut butter (frozen a little as well) with a crumbled cookie or cupcake on top 🙂 Oh & of course a dollop of whip cream.
  • First song that comes to mind. I don’t listen to music often, so honestly; nothing does
  • First major purchase. When Joshua & I bought our first car. 2007 Mazda S3
  • First job. Brusters Ice Cream. Yum!
  • First time you flew on a plane. No idea. All I know is I was very young. It may have been to Montana, or maybe it was to Iowa? I couldn’t tell you.

Breakfast: Caramel Pancakes with apple, cinnamon, unsweetened coconut & syrup. The added caramel to the batter & coconut made these pancakes taste like pure heaven!!

heavenMost of you know, Joshua only has Sunday’s off. Since he works six days a week and between 10-12 hours each day, our weekends are usually very low-key. From time to time we’ll adventure to Kuwait City, but for the most part, Joshua needs need’s his relaxation.  Even though this weekend was the same as usual, it was just perfect.  I thought I’d share some things we did together with all of you. Who says you need to spend a certain amount of $$$ to have fun?? J

  • Made homemade dog biscuits for Roxy

  • Started reading “The Meaning of Marriage”. Brittany mentioned and recommended this book on her blog. We’re only a chapter in, but so far I can’t say enough good things.

  • Watched three awesome movies; Here Comes the Boom, Django Unchained and Zero Dark Thirty (Anyone else out there think Jamie Fox is amazing eye candy??? :)).

  • Decided we are going to start learning German. Wish us luck!

&& all of that + walks with Roxy sums up our weekend. We thought about eating lunch at a nearby park yesterday afternoon, but unfortunately it was very overcast. Oh well, maybe next weekend :).

Eggplant.. yes please

Good Morning & Happy Saturday! Up until last night, nothing too exciting was happening over here in Kuwait. My Friday afternoon consisted of cleaning, baking, school & spending an obnoxious amount of money on groceries (Kuwait, why must you charge $9.00 for ONE bag of cheese??)

Once dinnertime rolled around, oh man that’s when things got good. Thursday night while I was browsing dinner recipes for the next two weeks, I came across THIS recipe (Eggplant Panini with Pesto). I was kind of hesitant about it at first, not knowing if Joshua would enjoy it or not. Surprisingly enough, he loved it! Since it was a success, I just knew I had to share it with all of you :).

Eggplant Panini with Pesto :: Serving size 2

Ingredients:

  • 1 small-medium eggplant (6 oz.)
  • 1/3-1/2 cup shredded mozzarella cheese
  • 1 tbsp. pesto
  • 4-6 thin slice tomato
  • whole wheat french bread
  • salt and pepper
  • olive oil

Preparation:

  • Slice eggplant into 1/4″ slices
  • Place eggplant slices on paper towel, season with salt, and let sit for 30 minutes (this will soak up some of the moisture); Pat eggplant dry
  • Season eggplant with pepper, and then lightly spritz with olive oil
  • Place eggplant on panini grill.
  • Grill for 8 minutes; turning once halfway through
  • While eggplant is cooking, cut bread in two 4″ inch pieces
  • When eggplant is finished, lay 2-3 slices on each piece of bread
  • Top with mozzarella cheese, tomato & 1/2 tbsp. pesto
  • Close sandwich, place back on panini grill & cook until bread is toasted and cheese is bubbling out
  • Enjoy =)

Thankful Thursday : Good and Bad

Good Morning and Happy Thursday! Boy am I glad tomorrow is Friday… Pay day baby!! I can’t tell you how bad we are in need of some groceries right now. One downfall though… bills! If only they didn’t exist. I mean wouldn’t life be easier that way? (oh we can dream) Ha Ha!

Anyways, with it being Thursday that only means one thing: Thankful Thursday!

Today I am Thankful For… Memories; Good and Bad. All memories affect you in a different way. Some put the biggest smile on your face and give you a feeling of achievement, and happiness, where others may make you question why life is the way it is. No matter what though, these are the moments in life that you need to soak in and never forget. When you are going through a rough time, try to remind yourself that things will be okay; God will never let you fall, but he will test your strength from time to time.

Since my meals look identical to last week (except Meal #5 & #6), I thought I’d change it up today.

Everyone has those days where they are constantly on the go; overloaded with work, traveling. Or maybe your under the weather, and the thought of cooking sounds awful.

Well, I believe that its fine to indulge in fast food items from time to time. I’m sure if you would have asked me this years ago, my answer may be different, but in today’s world, healthy options DO exist! It’s just up to YOU to make them. Listed below are healthy choices for when your on the go:
