Thankful Thursday Explanation…

Good Morning Everyone!  Before I get into today’s post, I wanted to say that I hope all of you East Coasters are safe, and only have minimal damage if any at all. You’ve all been in my prayers since Hurricane Sandy was first mentioned.

Okay, I wanted to make a post explaining what Thankful Thursday is all about since I never truly did before the link up was launched:

What exactly is Thankful Thursday??

Thankful Thursday is a day reflecting on the good in your life. A day where you can express what you appreciate. A day where you can sit down and think of the small and big things happening around you. It doesn’t have to be anything major, it can be as simple as “I’m thankful forthe sun. It brightened my day from the minute I woke up.” Take a moment out of your day, and share what you’re blessed with in life. You never know, you could be an inspiration to so many ❤ Remember, “There is always, always, always something to be thankful for!”.

Marvelous In My Monday

Good Morning Everyone! How was your weekend  Ours was nice. Watched football all Saturday night & than on Sunday we watched movies & Californication. Unfortunately, I wasn’t feeling too hot all day Sunday. I’ve been having some stomach trouble lately. Fingers crossed it’ll go away soon

Enough about me not feeling well, let’s get into Marvelous In My Monday hosted by Katie over @ HealthyDivaEats. Today’s post is going to be all over the place when it comes to what’s marvelous, so try to keep up :).

Marvelous is… that it finally rained Saturday. I haven’t felt rain since before I moved to Kuwait back in May. I have never been so thankful, even if it didn’t last long.

Marvelous is… I talked to my twin brother, Justin this weekend. Were close, however he’s been so busy lately that it’s been a good while since we’ve talked last. It was so marvelous to hear how well he’s doing, and how happy he is with his new girl.

Marvelous is… this protein shake I had for dessert last night. ((In the mix: 1/2 scoop cinnamon bun protein powder, 1 cup milk, yogurt (optional), 1 tbsp sugar-free vanilla pudding mix, 1/4 tsp cinnamon, 1/2 tsp vanilla extract and ice. After I let it freeze up a bit more in the freezer, I added crumbled up coconut cookies)).. 

Marvelous is… gingerbread! I’ve been pinteresting anything and everything that involves gingerbread. Don’t get me wrong, I love pumpkin but I’m ready for another flavor in my life 🙂

Marvelous is… these lululemon clothes. Now if only I was rich & could afford it all. Don’t worry, you can always donate money to “Jessie’s Lululemon fund” 🙂


Not Marvelous… Hurricane Sandy! To all of you (and my family) who live on the East Coast, please be careful. My prayers are with all of you. I hope by now you are prepared, and all have all the major necessities in case your stranded for a couple of days without electricity.

  • Question: Have any of you tried Nature’s Plus Spiru-Tein® protein powder? I was ordering my usual Myofusion Probiotic last night off of vitacost & saw a variety pack for Nature’s Plus Spiru-Tein®. All the reviews seemed positive, but I just thought I’d see what y’all though :).

Chocolate Zucchini Bread & A Survey

Happy Friday Everyone!

I don’t know how your day has started, but my goodness mines been hectic. One of the biggest downfalls about living in Kuwait is their holidays. They come at the most random times, and I never know what places will or will not be open. This morning I was trying to find an electronic store to get my husband talk time (money on his cell phone), and literally went to three different stores. Thankfully I came home to a smoothie in the freezer waiting for me :).

Earlier this week I talked about this amazing Chocolate Zucchini Bread I’ve been eating all week. Well for all of you who asked for the recipe, here it is. Enjoy! 

Chocolate Zucchini Bread


  • 2 cups whole wheat flour
  • 1 tsp salt (omit if you’d like)
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 2 tsp. ground cinnamon
  • 1 egg, 1 egg white
  • 1 cup applesauce
  • 3/4 cup splenda
  • 3/4 cup light brown sugar
  • 2 tsp. vanilla extract
  • 1 tablespoon unsweetened cocoa powder
  • 1 1/3 cup grated zucchini


  • Preheat oven to 350 degrees. Spray cooking spray into a bread pan.
  • Grate zucchini
  • In a lg. bowl, mix flour, salt, baking powder, baking soda, cocoa powder and cinnamon
  • In another bowl, beat eggs, applesauce, vanilla extract, splenda, and brown sugar
  • Add the dry ingredients to the wet, and mix well
  • Fold in zucchini, and any additional ingredients you may want to add (walnuts would be good I’d imagine)
  • Pour batter into bread pan
  • Bake anywhere between 45-50 minutes.

There you have it. It’s so simple. I promise you if you have a husband whose against zucchini, he won’t even know it’s in there 🙂 Joshua actually really enjoyed it, and kept complimenting on how moist it was!

Moving on… Yesterday I came across this fun survey on Alex’s page who blogs over at TheRunWithin. Have you guys ever visited her page? If not, you definitely should. She’s currently working 2 jobs, and still manages to run 50+ miles a week. I’m not sure where she finds all this energy, but she does! Bless her heart 🙂 Oh & did I mention the fact that’s she’s awesome and a total sweetheart??

A is for age: Twenty Three. I’ve come to realize 23 is one of those years that feel just like all the others.

B is for breakfast today: I cannot get over how much I’ve been changing my breakfast meals up lately. For about 2 years, I would have a smoothie every single morning. However, since upping my calorie intake those have been put off until Meal #2. This morning I had a big cereal/yogurt mix. I mixed one vanilla yogurt w/ a serving of Barbara Original Puffin Cereal, and 1 tablespoon peanut butter.

C is for currently craving: Nothing really. I’m actually eating my smoothie right now, so I’m rather content.

D is for dinner tonight: Something incorporating shrimp. Anyone of have a good recipe you want to share with me?

E is for favorite type of exercise: Running. However, since I’ve been sidelined from running, I’ve really started to enjoy my everyday walks.

F is for an irrational fear: Not being able to become pregnant for years. Being kidnapped

G is for gross food: Olives. Ehh just the thought of them makes me crinch

H is for hometown: York Haven, Pennsylvania. It’s a pretty small town. I’m not even sure if it’s on the map

I is for something important:Continuing to nourish my body with the food & rest it needs in order for my husband and I to start a family.

J is for current favorite jam: Not sure if this question is in regards to music or food. I don’t listen to music often, so I’m going to say strawberry jam.

K is for kids: Love them, and cannot wait to have my own

L is for current location: Mahboula, Kuwait.

M is for the most recent way you spent money: I really only spend money on food & taxi fares.

N is for something you need: My husband. He’s my strength, and the reason I smile day in & day out. Without him, I’d be nothing.

O is for occupation: Housewife.

P is for pet peeve: Ha, I could go on & on with pet peeves of mine. However, I’ll only share a few.

  • I hate terrible drivers
  • I hate when taxi drivers try to take advantage of me. I may be American, a girl, and a blonde but don’t think for a second I don’t know how much it should cost from town to town (they don’t run the meters here often)
  • A messy kitchen. The rest of our house could be messy, but you’ll never find our kitchen messy.

Q is for a quote: I don’t have a favorite quote, however these ones have been helping me recently:

  • I may not be there yet, but I’m closer than I was yesterday
  • You got what it takes, but it will take everything you got
  • Be strong because things will get better. It might be stormy now, but it can’t rain forever
  • Do not give up, the beginning is always the hardest

R is for random fact about you: I hardly ever wear makeup. In fact, the only time I wear it is when the hubs & I are going out on a date.

S is for favorite healthy snack: It’s a tie; either apples & peanut butter or broccoli with a little ketchup 🙂

T is for favorite treat: I don’t believe in labeling food as a “treat”. My favorite “unhealthy” food would be chips & salsa.

U is for something that makes you unique: I don’t have a clue. Maybe the fact that I can’t whistle?

V is for favorite vegetable: Broccoli & Brussel Sprouts!

W is for today’s workout: 20 minute walk with Roxy

X is for X-rays you’ve had: Oh my heavens, I’ve had so many. The most of them have been on my arms/hand though. Did I ever tell you I’ve had 7 broken arms/hands??

Y is for yesterday’s highlight: The hubs & I catching up on Tuesday’s night Sons of Anarchy episode. Does anyone else watch this show? If not, you should!!

Z is for your time zone: I don’t have a clue? I know that’s terrible.

Thankful Thursday:: Link Up

Hey Y’all!! I’m so excited to finally have this Thankful Thursday Link up going. I’m the worst when it comes to technology, so believe me when I say it’s taken me forever to figure out how to do this. My fingers are crossed that the link up works! Please let me know if it works for you :).

Well let’s get started::

  • I’m thankful for… The awesome care package I received last night from my best friend. It couldn’t have come at a better time. Yesterday was one of those days where you wish you could erase. It didn’t have anything to do with my health whatsoever. It was a day when you needed to use an ATM  but for whatever reason they all seemed to be out of service. It was a day where you had to run around from place to place to try to get something accomplished. Yeah, that kind of day. (Thanks again Sandra, love & miss you!)
  • I’m thankful for… My internet working today.  Lately, our internet has been going out every other minute. It’s quite annoying to be honest, but hey things could be worse right? Thankfully there’s a Caribou Coffee right next door that I can chill at throughout the day.

  • I’m thankful for… This morning. I woke up to my best friend. The man who makes me smile daily. The man who thinks I’m beautiful no matter how I feel about myself. The man I’ll be spending the rest of my life with.

  • I’m thankful for… Lindsey over @ ARunningTale for introducing me to a forum where I can talk with others who have/had HA. I haven’t posted a thread yet, but just reading the forum I’ve been so inspired. It’s brought a calmness and reassurance over me that things DO get better.

  • I’m thankful for… Loving & believing in myself more than I ever have. I never thought for a second I’d be so relaxed when it came to decreasing my mileage, but you know what.. I’ve proved myself wrong. I’ve learned that life is too short to take for granted.

  • This isn’t a “Thankful For”… but I’m sending prayers and safe travels to my dad today. He leaves this morning (from Pennsylvania) for his yearly hunting trip out west.

Happy Wednesday! Before I get into my Wednesday’s Tuesday’s meals, I have exciting news to share with y’all. Guess whose now a Sweat Pink Ambassador?

Yup, this girl right here! I got my e-mail last night stating that I was selected by Fit Approach to be apart of the team. I couldn’t be more honored and blessed to be apart of such a wonderful group of ladies.

Their mission statement alone, is so inspiring to me.

We believe that kicking ass is best done in pretty shoes. We’ve learned that real women sweat, and sweat hard. We know that assertiveness, strength, and ambition are the ultimate feminine qualities. We concede that sometimes it takes hours to get ready, but we’re also no strangers to just rolling out of bed and going. We’re convinced that we run faster in pink shoelaces. We believe in pushing ourselves, and we believe in giving ourselves a break, too. We’re all about the rush of endorphin’s and the thrill of the challenge. We’re all for looking great and feeling even better. We’re committed to finding our best fit, and making it stick.

How do we get there? We climb. We journey. We balance. We reward.

Okay, and now moving on to What I Ate Wednesday, hosted by the wonderful Jenn over at PeasAndCrayons. If you aren’t familiar with the program, it’s a day where you share your daily meals, recipes, favorite food you may have eaten recently, etc… with others.

Meal #1: Waffle-wich made with 2 waffles, 2 eggs, jelly, an apple & cinnamon.

Meal #2: Smoothie made with 2 cups strawberries, yogurt, zico water, 1 scoop strawberries & cream protein powder, 2 tbsp. pb2, and ice cubes.

Meal #3: Salad with rainbow mix, tuna, cucumber, tomato, brussel sprouts, laughing cow cheese, and salsa. On the side I had one clementine & 2 pieces of my chocolate zucchini bread I made this past weekend .

Meal#4: Eggs. These guys right here may have been the best eggs I’ve ever had, or eaten!! In the mix: 2 eggs, tomato, red peppers, hummus, and ketchup. Oh & another piece of zucchini bread.

Meal #5: Pancakes: Y’all know how I said I was going to make gingerbread ones? Well when dinner game, I was in a “blah” mood and just not feeling it anymore. I ended up just throwing some bisquick mix with almond milk, and vanilla extract together. Oh & I forgot a picture too. Whoops!

Meal #6: Dessert: An Apple with protein powder/pb2 mixture.

Sorry about the un-pictured pictures @ the end. I always feel like by the time dinner comes around my mind totally turns off from blogging. The husband and I don’t see each other much, so the time we do have together is something I love to embrace & take advantage of :).

Tangent Tuesday

Hey Y’all!! One day down, only today and three more days to go until the weekend begins! I can’t get over the fact that this upcoming weekend is the last one in October! Crazy right??

Anyways, let’s get into some wonderful tangents shall we:

  • Is this not one of the most adorable pictures you’ve seen? I cannot get over how cute she looks. Her little paws under her mouth, ah it’s so precious to me. I think another reason why I’m so in love with this picture is the fact that she never let’s me take any. I swear it’s like she knows when I’m about to snap a picture & will turn her head the other way.
  • Y’all know how I have pancakes planned for this evenings dinner? Well call me crazy, but it’s all I’ve been able to think about today. I can’t tell you the last time I’ve had a pancake. To make it even more exciting, I just got a new Gingerbread pancake/waffle mix last night!! Ehh, so excited!!

  • Whoops, I made an online purchase error. I didn’t realize I had ordered 10 things of milk. However, I think it’s safe to say that I should be good on milk for a while :).

  • Last night while the hubs & I were at the dinner table having dinner I got to thinking about our eating habits. We are completely different when it comes to food choices. I swear he could live off of Burgers, and pizza; where I am the complete opposite. I don’t mind a slice of pizza from time to time, but my gosh i would be lost with greens, vegetables & fruit. Is your husbands, fiance,, or boyfriends eating habits similar to yours or more like my husbands?
  • I’m pretty annoyed in the fact that the Penn State vs Ohio State game won’t be on television this weekend here. I mean I get that both teams aren’t bowl eligible but really AFN you’d rather play Iowa@Northwestern instead?? Come on!!!

Well that’s all I got today. The rest of my day will consist of taking Roxy for a walk, and doing laundry. Fun things happening in the Gipe’s house 🙂 Hope y’all have a great rest of the day xo.

Marvelous In My Monday

Happy Happy Monday Everyone!! How was your weekend? Do anything over the top? I’d love to hear all about it.

Since it’s Monday, you should already know what that means. Yes, It’s another addition of Marvelous In My Monday hosted by the beautiful Katie @ Healthy Diva Eats


Marvelous is my weight gain last week. I actually put on a pound and half last week. Since I believe in pure honesty, I want to add that it wasn’t easy. I know that sounds ridiculous, but it’s true. Since upping my calorie intake, I’ve felt bloated & so uncomfortable at times. I know this feeling will soon fade once my body starts adapting to the new changes, but it’s been tough.

Marvelous is watching movies with my husband. This weekend was very relaxing. Hubs & I finally were able to watch “The Campaign”. We both thought it was hilarious, and a great movie to watch when spending the night @ home.
Marvelous is the dinners I planned for the week
  • Monday: Poached Salmon Pasta Salad + Zucchini Bread
  • Tuesday: Pancakes for dinner (please tell me breakfast food is totally acceptable for you as well)
  • Wednesday: Black Bean & Butternut Squash Burritos
  • Thursday: Grilled Island chicken (recipe from A Running Tale)
  • Friday: Pan Seared Shrimp or Broccoli Cheese & Potato Soup (recipe from SkinnyTaste)

Marvelous is evening walks. Last night the hubs & I took Roxy for a 20 minute walk. It was so relaxing, and the weather was nice. Even though our days are still in the 100’s, the temperatures drop to around 80 at night. 80 degrees + breeze from the ocean make for a beautiful night.

Marvelous is a new dessert I made. I must be on a zucchini kick, because yesterday I made Chocolate Zucchini Bread. Well it was supposed to be bread, but I couldn’t find our loaf pan. The batter ended up going in a 9 x 9 baking dish. The result: moist, and delicious. Joshua couldn’t even taste the zucchini. In my book, that’s always a success!
